Research project CiLaKlima – Recipe Book

Chickpeas and grass peas are hardly grown in Germany anymore. However, they have great potential: Due to climate change, Germany is becoming warmer and drier, and common protein crops, such as peas and field beans, are increasingly suffering from yield fluctuations. Chickpeas and grass peas, on the other hand, are well adapted to dry and warm climatic conditions, and we expect them to be able to maintain yields even under conditions of drought and heat in Germany. Due to the rising demand for vegan and locally produced foods, interest in growing new protein crops is also growing. Chickpeas and grass peas are plant-based protein sources with beneficial nutritional properties. The recipes are intended to inspire consumers to incorporate chickpeas and grass peas into their diets. This recipe booklet was created in collaboration with Heilbronn University of Cooperative Education, Food Management (2024). The students optimized the recipes, cooked the dishes, plated them, and photographed them together with photographer Katharina Traub.
